At Finca Villadiego we make Manchego cheese while taking care of each process meticulously, not only in the transformation of milk into Manchego cheese, but also from the same source of raw materials that is the diet of our sheep.
The Finca consists of more than 1,000 hectares, which are located in a privileged place on the banks of the Guadiana river, what makes its land fertile and covered in green pastures.
Likewise, they have the most modern irrigation systems for the use of crops and both energy and water savings, being water a very scarce resource at this time, and starting the traceability from this moment.
Both our team of engineers and the rest of the personnel in charge of the agriculture put all their effort into taking care of the crops of our lands in order to obtain the best food for our livestock, which will be the basis of a good product.
When the fruitful pastures are at their peak, the sheep get all the quality that they provide and when their natural cycle ceases to have all their use, it is necessary to complement their diet with the products grown by us, such as alfalfa, barley, corn, wheat, etc. Therefore, balanced rations made and supervised by veterinary experts will be elaborated. In this way, a proportionate and compensated feeding is obtained in whatever climatic season; thereby aiming at obtaining a final product much more homogeneous in the time and of higher quality.
Only having all the necessary elements for the elaboration of the final product, we are able to maintain a detailed control over all the production.
